Hello! As most of you know I have 5 kiddos. Annnnd boy do they like to eat! ;) We go through a TON of milk, bread, & eggs every week. We have several go to recipes that are quick, easy, delicious & healthy. One of our favorites are these baked egg sandwiches. Yum! These are great for breakfast, & I also LOVE that I can just pop the extras in the fridge. Then when the kiddos get home from school they can pop them in the microwave for a quick & healthy after school snack. In addition to sharing this recipe I also have a fun giveaway from Eggland’s Best (EB) eggs so YOU can make a “Kid-Approved” EB egg recipe of you own. So keep reading! :)
To make these baked egg sandwiches you’ll need a few things! :)
1 dozen Eggland's Best (EB) eggs
10 slices of Colby Jack cheese
10 large croissant rolls
20 slices smoked ham
Recipe inspired by this one.
Crack eggs in a large bowl. Beat with a whisk.
Pour eggs into a 9X13 inch pan that has been lightly sprayed with cooking spray.
Put in a 350 degree oven for 10 minutes or until eggs are firm.
Remove from oven.
Cool slightly, then cut eggs into 10 pieces with a spatula.
Slice croissant rolls in half.
Layer egg slice, 2 slices of ham & one slice of
Colby Jack cheese on the bottom half of the croissant roll.
Put the top of the croissant roll on.
Bake in a 350 degree oven for 5-10 minutes until the cheese melts,
& the croissant is toasted.
Serve with fresh fruit & a glass of milk or orange juice. Enjoy! :)
