Baked Egg Sandwich {recipe} & giveaway

Hello! As most of you know I have 5 kiddos. Annnnd boy do they like to eat! ;) We go through a TON of milk, bread, & eggs every week. We have several go to recipes that are quick, easy, delicious & healthy. One of our favorites are these baked egg sandwiches. Yum! These are great for breakfast, & I also LOVE that I can just pop the extras in the fridge. Then when the kiddos get home from school they can pop them in the microwave for a quick & healthy after school snack.  In addition to sharing this recipe I also have a fun giveaway from Eggland’s Best (EB) eggs so YOU can make a “Kid-Approved” EB egg recipe of you own. To make these baked egg sandwiches you’ll need a few things! :)

1 dozen Eggland's Best (EB) eggs
10 slices of Colby Jack cheese
10 large croissant rolls
20 slices smoked ham
cooking spray

Crack eggs in a large bowl. Beat with a whisk.

Pour eggs into a 9X13 inch pan that has been lightly sprayed with cooking spray.
Put in a 350 degree oven for 10 minutes or until eggs are firm.

Remove from oven.
Cool slightly, then cut eggs into 10 pieces with a spatula.
Slice croissant rolls in half.

Layer egg slice, 2 slices of ham & one slice of
Colby Jack cheese on the bottom half of the croissant roll.

Put the top of the croissant roll on.
Bake in a 350 degree oven for 5-10 minutes until the cheese melts,
& the croissant is toasted.

Serve with fresh fruit & a glass of milk or orange juice. Enjoy! :)

A little bit of information about Eggland’s Best (EB) eggs ~

  5. I've never baked eggs, but these looks great - I'm going to give it a go when everyone is home!

    We enjoy migas, but I do not make them that often, they are not super healthy.

  6. Egglands Best are the only eggs I buy! I love to eat them scrambled with a little sautéed spinach and mushrooms.

  9. I make a egg, spinach, mushroom and cheese quiche for breakfast and any leftovers can be used for lunches the following day. We also do a egg, sausage and cheese quiche for the little ones.

  14. One of my fav egg recipes is homemade pudding - chocolate, vanilla, butterscotch - you name it!!! The eggs make it richer and more nutritious!

  16. My favorite is a chorizo egg bake. It's a casserole type dish with salsa, sour cream, chorizo, and of course, eggs!

  17. We make chorizo burritos. I have a family of 5 so this is a great, inexpensive breakfast. We use scrambled eggs, chorizo, hash browns, crumbled bacon and shredded cheese. We put it in a flour tortilla, add toppings and then grill it on our panini grill. We make several ahead of time and put in the fridge or freezer for field trips, family trips or early morning appointments. They are amazing!

  18. I like to put a small pat of butter in a pan and allow it to slowly melt. Add a cracked egg and scramble it in the pan with a spatula. Add a little grated Sharp Cheddar and serve!

  20. I've never thought to BAKE eggs in the oven! Genius! I'm going to try this at my next family brunch. Look out omelets; this may be my new favorite!

  25. I can't think of a favorite, the last I had was over easy with bacon and buttered toast. The toast is use to wipe up every bit of the yolk.
