Cinnamon Sugar Pretzel Bites from Nessa Makes {contributor}

Hi! I am Vanessa from NessaMakes.com and I am so excited to be sharing a yummy recipe with you here on Ginger Snap Crafts!

It has been a recent goal of mine to make my own pretzels since I am practically obsessed with the things. I love a warm soft pretzel and I thought they would be super hard to make-- but surprisingly they are not! I made these Cinnamon Sugar Pretzel Bites, and they actually taste like pretzels. I am amazed. Ha!

Cinnamon Sugar Pretzel Bites

Here's how you make them:

Ingredients

1 package Active Dry Yeast
2 Tablespoons Brown Sugar
6 Tablespoons Butter, Melted
1 1/2 cups Warm Water
1 1/4 teaspoons Salt
4.5 to 5 cups Flour
2 Tablespoons Oil
4 Quarts Water
1/2 cup Baking Soda
1 egg
1 Tablespoon Cold Water
4 Tablespoons Butter, Melted
1/4 cup Sugar
2 Tablespoons Cinnamon

In a large stand mixing bowl, combine yeast, brown sugar, warm water, butter and mix with a dough hook on low speed. Once mixed, let stand for 5 or so minutes to activate the yeast. Add flour and salt and mix on medium speed until dough has formed a ball and has separated from the sides of the bowl. If the dough is too wet, add more flour 1 Tablespoon at a time. You want to be able to touch it without it sticking to your hands.

Take ball of dough and knead on a flat surface for about 30 seconds. Place oil in the bottom of the mixing bowl you just used, lay the ball of dough on top and roll dough around inside the bowl to completely coat with oil. Leave dough in bowl and cover with a towel. Set dough in a warm spot and allow dough to rise for an hour or until it doubles in size.

Once dough has risen, preheat oven to 425 and put water in a large saucepan on the stove, bringing to a boil. Once water has boiled, add baking soda.

Take your dough and separate it into 6 equal parts. Roll each part into a long "snake," about 2 feet long. Cut dough into pieces, about 1" each and boil in saucepan for 30 seconds.  I found that I could boil dough in 6 batches. Do NOT boil the dough together all at once!

Once all boiled dough is out of the water, place on a baking sheet equally spaced apart. Combine egg and Tablespoon of water in a small bowl and beat with a fork to make your egg wash. Using a pastry brush, brush all your dough with said egg wash.

Place in preheated oven and bake 15-18 minutes, or until pretzels are a golden color.

Right before you get your pretzels out of the oven, melt your butter and combine your cinnamon and sugar into a bowl as you will want to coat your pretzels fresh out of the oven.

Once pretzels are out, brush with melted butter, sprinkle liberally with cinnamon and sugar and consume. Delish!
