I found this Chicken Chili with Black Beans and Corn recipe over at (They have tons of yummy recipes over there!) Anyways, I changed it just a little bit & turned it into a crock pot dinner! I love using my crock pot! ha! ;)

For this recipe you will need:

  • 2 chicken breast, cooked & cut up
  • 1 cup of diced green bell pepper
  • 1 cup of chopped white onion
  • 1 cup of frozen corn
  • 1 can of diced tomatoes, undrained
  • 1 can of black beans, undrained
  • 1 can of great Northern beans, undrained
  • 1 cup of chicken broth
  • 1 cup of water
  • 1 tbs McCormick Paprika
  • 1 1/2 tsp McCormick Oregano leaves
  • 1 tsp McCormick Cumin, ground
  • 1 tsp McCormick Garlic Powder
  • 1/4 tsp McCormick Crushed Red Pepper

McCormick Spices

chicken chili ingredients

First you'll cooked your chicken in some water on the stove. Tip: Save a cup of the chicken broth for later. Then you'll cut your cooked chicken up, & then you'll dice your green dell pepper & onion. I used a handy chopper for this, & it's so easy! Then you'll start adding the ingredients to your crock pot.

Then you'll stir everything together. Set your slow cooker on low, and then let it cook for 4-6 hours. Just warning you ~ your house will start smelling sooooo good as it cooks! All the spices & vegetables together just smell ah-mazing! Yum! :)

While it's cooking you can make some homemade cornbread muffins to go with it! Then you'll be set for a yummy fall meal with your family! ;)
